Ki-Nua Murta Muffins

INGREDIENTS

100g Ki-Nua Murta
3 large eggs
100g sugar
40g flour
15g butter
3 egg whites
16g sugar

METHOD

Mix butter and sugar until combined, add egg, softened butter, murta ki-nua and flour and mix. Beat egg whites with sugar until soft peaks form and add to the mixture. Pour mixture into greased muffin tins lined with cupcake cases. Fill until 1cm below the edge of the cupcake case. Bake for 15 minutes at 180°C.
